Qvevri wines are made by the centuries-old traditional Georgian methodology. In 2013, the Georgian traditional method of aging wine was inscribed in the UNESCO World Register of Intangible Heritage. Soil: Soil type is Cinnamonic – sandy, reddish-colored, calcareous clays high in iron.
VINIFICATION: Made from Saperavi, a highly pigmented black Georgian grape variety which is fermented and aged in a Qvevri. The grapes are crushed and put into the Qvevri alongside their skins, pips and stalks (known in Georgia as the chacham which can be made into spirit later), the wine ferments and then stays in the Qvevri for around six months at which point the chacham is removed and the wine is returned to the Qvevri for further ageing.
TASTING NOTES: Distinguished with dark, Crimson color. Characterized by black fruit, berry, plum and vanilla aroma. On the palate it is driven by dark fruits, Prune, Blueberries, wild Berries & Cherry notes. This wine has grippy tannins on the palate, which are balanced and kept in check by its acidity. Unfiltered, and highly textured in the mouth, with a long, complex finish.This wine is ready to be decanted and drunk now, or it can be cellared to age for another 5 - 10 years, at the least.
FOOD PAIRING: This wine is a beautiful match with grilled Veal, stewed Beef, Steak, Lamb, Ribs, Duck, Goose, or Game birds, & Cheese boards.
