Vineyard: CSWA certified, sustainably farmed and family-owned Springer Vineyard in the Big Valley District AVA of Lake County, outside of the town of Kelseyville.
VINIFICATION: The grapes are pressed and fermented spontaneously by ambient yeast in stainless steel tanks over a two week period, then rested on its own fermentation lees which were kept up in suspension by stirring the tank. (The stirring gives the wine its rich mouthfeel and helped release the glutathione from the lees which acts as a natural preservative and allowed to age and bottle the wine without additional sulfur adds.) Bottled without fining or filtration. No sulfites added.
TASTING NOTES: This lightly hazy, unfiltered Sauvignon Blanc has lovely notes of Gooseberry and Citrus, without being as overly Grapefruit-driven as some New Zealand examples. Nice touches of Green Melon, Green Apples. Hints of Tropical fruit & balanced acidity give this wine a bright feel in the mouth. There is a slight herbaceous edge to this wine, with notes of pepper integrating with Melon and other fruit notes; this is a beautifully textured wine due to it being unfiltered, which help it hold up wonderfully with a wide variety of foods.
FOOD PAIRING: This wine will pair exceptionally well with Seafood, Shellfish, Sushi, Japanese Cuisine, Poultry, Goat Cheese, and Salads.
