HISTORY: Dave and Melissa both grew up 35 minutes away from Buttonwood Grove, in Skaneateles, NY. Dave had inherited a passion for agriculture from an early age, growing up working at Beak & Skiff Apple Farm in Lafayette, NY.  The orchard, which has been in his family since 1911, taught Dave how to care for the natural resources of the land, and gave him his first introduction to wine-making, producing apple based wines, vodka and cider. Quickly realizing his true passion, he went on to attend Cornell College of Agriculture.

Buttonwood Grove winery has established a reputation for producing some of the most noteworthy wines in the Finger Lakes, as well as hosting exceptional events, due to the hard work and dedication put forward by previous owners Ken and Diane Riemer. When the unique opportunity arose to purchase the beautiful Buttonwood property in early 2014, Dave and Melissa leapt at the opportunity.

ABOUT: Pet Nat – Short for "Pétillant Naturel," i.e. "naturally sparkling." This fun and fruity sparkling wine was handcrafted from Riesling grapes harvested on our farm during the 2021 growing season. The oldest known method of producing sparkling wine, the Méthode Ancestrale used to create our Pét-Nat dates back to at least the 1500s. 

VINIFICATION: Fermented in the bottle and Unfiltered, this wine has a lower alcohol content (11%) and will contain some sediment. 1% RS (Residual Sugar). 

TASTING NOTES: Heady notes of Wild Honey, Ripe Pink Grapefruit, Red Apple, Pineapple & Jasmine – along with an intriguing wet-stone Minerality – open this cloudy Apricot-hued Pét-Nat. The palate is Dry, Tangy and Textural. Vibrant notes of Lemon Curd and Starfruit on the palate. There's some richness here, but it's barely felt amidst the tingling, mouthwatering acidity. Composed, but barely hiding a wild streak, this is characterful and downright delicious.

FOOD PAIRING: Delightfully bubbly, it pairs well with Oysters, Shellfish, Seafood, Sushi, Creamy White Sauces, Pork, Poultry, Fried Foods, Spicy dishes, Charred Vegetables, Consomme & Cheeses.
