HISTORY: Grapes are grown in a 120 + year old "lost" vineyard that was overgrown with native shrubs in the Itata Valley D.O., Chilé.
ABOUT: Karine and her husband, Edgar Mollenhauer have a family-run winery in the Maule Valley of Chile where they produce a few small-production wines from local grapes. Their idea is to elevate the reputation of Chilean wine through their hard work farming organically, with minimal intervention in the cellar. Everything is done by hand, with gravity (instead of pumps), free of synthetic chemicals, minimal intervention of the musts, and always unfiltered. Making pure wine which expresses the beautiful terroir where they reside between the Pacific Coast and the Andes Mountains.
VINIFICATION: From two plots of 100% Semillión planted in 1900 and 1955 respectively organically grown on decomposed red granitic soils and an elevation of 174-265m. These are ungrafted, dry-farmed bush vines. Hand harvested, fully de-stemmed in a stainless steel "zaranda" (manual destemmer) and goes into 3 completely topped-up Tinaja amphora. 2 are from Chile and 1 is from Extremadura, Spain (which is more reductive). Musts ferment with their skins and native yeasts. Once a day by hand they push down the cap, to prevent the surface from drying out and avoid acetic problems. Fermentation lasts between 4-5 weeks.
AGING REGIMENT: The wine continues to age in Tinajas for 9 months with zero movements. The wine is then drained and pressed, combining the free run juice and the pressed juice. It is then decanted statically and left to rest for 5 additional weeks before being bottled. Unfined, unfiltered, with only a small amount of SO2 added at bottling (40 mg/L). Low abv @ ~ 11%. This wine combines a harmonious mix of Herbal, Fruit, and Spice elements that Semillión can showcase. Structured and refreshing - considered their "Mariscal frio" wine.
TASTING NOTES: On the nose, there are some Floral notes, along with aromas of spicy Green Chili and Grass, w/ Citrus, White Fruit & Honey hints in the background. In the mouth this wine displays pronounced notes of Green Chile at first, then as it opens White Fruit, Honey & hints of Prickly Pear emerge. The palate has an excellent balance of acidity, and lovely structure. The at first linear mouthfeel broadens, and textured notes appear as the wine breathes. The long finish is quite persistent and textural.
FOOD PAIRING: Ceviche, Shellfish, Seafood, Fish Tacos; Poultry, White Meats; Spicy Mexican, Thai, or Indian dishes.
