ABOUT: The exposure of Sant’Anna vineyard is more to the West, with an average altitude of 450m above sea level. The area is breezy with a soil composed of Sand and Marls with a prevalence of the latter from the Lequio Formation- Serravallian/early Tortonian.
VINIFICATION: The grapes are harvested by hand to be made into wine right away. After de-stemming and crushing the grapes, the alcoholic fermentation starts in the must. The maceration lasts for about seven days with pumping over. After the alcoholic fermentation, the wine undergoes malolactic fermentation. Then it remains in stainless steel vats for about eight months. At the end of this process, it is bottled and left to refine in the bottles.
TASTING NOTES: Bright, intense Purplish Red with Violet highlights. Pleasant Black Fruit notes of Blackberries, Blueberries and Black Cherries, w/ some Red Fruit notes like Cranberries & Red Currants, along with Clove, Licorice and Spice. Plush & full in the mouth, w/ present but softening tannins. Blackberry, Blueberry & Licorice dominate the palate, leading to an elegant, medium length finish.
FOOD PAIRING: Pair this wine with Pizza Margherita, Game (Deer, Wild Boar), Game Fowl, Duck, Roast Poultry, Beef, Pastas w/ Red Sauce, Italian Sausages, dishes incorporating Fennel & Mediterranean Herbs.
