ABOUT: The Château de Marmorières is nestled in the heart of the La Clape massif. The vines are led by Jehan de Woillemont, 8th generation of winegrowers and oenologist by training. The plots are planted on limestone soils of the Cretaceous with a presence of gravel on the foothills of the cliffs. The vineyard, horseshoe-shaped turned eastward and receives full maritime freshness for an optimal maturation of berries. The vines are conducted in royat cord and Cup to limit returns, bringing aromatic intensity and structure. The Château de Marmorières produces Grands Vins de La Clape and enjoys a great diversity of fauna and flora on an exceptional site. There are olive trees, almond trees, umbrella pines, fennel, cistus and other flowers with the scent of scrubland. Marmorières covers 350 hectares in the communes of Vinassan and Fleury d'Aude. The Commanderie of St Pierre la Garrigue overlooks the Mediterranean over nearly 60 hectares.

VINIFICATION: The grapes for the "les Amandiers" cuvée from Château de Marmorières come from clay-limestone plots with low yields of less than 30 hl/ha. The harvest is done by hand, the grapes are sorted on arrival at the cellar. they go into carbonic maceration. This consists of placing the whole grapes with the stems in a tank saturated with carbon dioxide. The fermentation bursts the berries, this Coteaux du Languedoc thus produced is very aromatic. The aging of Les Amandiers lasts 12 months in oak barrels. 

TASTING NOTES: Dark Purple color with Garnet reflections. The nose of this AOC La Clape from Château de Marmorières offers a beautiful aromatic expression dominated by Small Red Fruits enhanced with a hint of Sweet Spices. The mouth of the cuvée des Amandiers is unctuous with velvety tannins, Red and Dark Fruits, hints of Garrigue, Eucalyptus & Spicy notes w/ a licorice inflected Med. length finish.

FOOD PAIRING: Enjoy this wine with Grilled Red Meat with flavorful Sauces, Grilled Poultry, Beef, Game, Lamb, BBQ, or with Cheeses. Serve at 18°C.
