VINIFICATION: 60% Seneca, 40% Keuka. De-stemmed. Several Day Cold Soak. Open-Top Stainless Steel. Temperature Controlled. Traditional. 3 Times Daily Manual Punchdowns. 10 Months Aging. 2-4 Year Old French Oak. Dry. 0.1% Residual Sugar. 13% Alc, 5.9 g/L TA, 1.0 g/L R.S., 3.35 pH

TASTING NOTES: Medium bodied Red Wine. The nose has notes of Blackberry, Plum, Cured Meats, Sun Dried Tomato and Violets. Juicy & powerful on the palate with elegant notes of Black Plum, Leather, Blackberry and Violets rounded out by Cedar, Oak, and slight Smoked Meat notes. Medium finish. Ripe and soft on the palate, it is a wine that is ready to enjoy now, or one to cellar to develop even more complexity.
