HISTORY: Cordero San Giorgio is a new beginning for three siblings who grew up surrounded by vines and winemaking in Piemonte, northern Italy. Francesco, Lorenzo, and Caterina Cordero have partnered together to take over Tenuta San Giorgio after the previous owner had no viable succession. Their family heritage and extensive work and study abroad led them to the Oltrepò Pavese to achieve their vision in 2019.
Named for the legend of St. George and the dragon, three of San Giorgio's wines reference mythical dragons and the concept of curiosity, challenging the unknown and triumphing in discovery and knowledge, all experiences that parallel the journey of the Cordero siblings.
ABOUT: The estate has 22 hectares of land in total. 20 hectares of vineyards are planted between 200m - 250m to Pinot Nero, Pinot Grigio, Chardonnay, Croatina, and Barbera. All work in the vineyard is carried out according to organic principles since July 2019 with the official organic conversion beginning in July 2021.Vineyards Location: Santa Giuletta in Oltrepò Pavese, planted in the early 1990s in predominantly Clay soil.
VINIFICATION: Grapes are softly pressed before primary alcoholic fermentation, which occurs in Stainless Steel tanks at a controlled temperature.The wine does not undergo malolactic fermentation. It is held on its lees in Stainless Steel tanks for about 6 months until just prior to bottling, and then it rests in bottle for at least 2 months before release.
TASTING NOTES: Intense and bright Cherry pink color. On the nose, it opens with a markedly fruity bouquet, where the aromas of small berries, such as Raspberry and Wild Strawberry, are complemented by fresh floral aromas of Violet and Rose. The fruit driven palate is well balanced by fresh acidity and a pleasant sapidity, revealing a rich and fragrant full-bodied wine with a persistent & lingering finish.
FOOD PAIRING: This wine will pair perfectly with Charcuterie, Light Cheeses, Grilled Meats, and Pizza, but also ideal pairing with Shellfish, Fried Anchovies, or Fried Fish.
