ABOUT: Made from a selection of the best native grapes, which are processed following the 'appassimento' method for three months, in line with an age-old tradition in Valpolicella.
VINIFICATION: Hand-harvested in mid-September from the Marano di Valpolicella, Sant’Ambrogio di Valpolicella & San Pietro in Cariano vineyards. After harvest, the grapes are rested for 3 months on special racks at room temperature with ventilation. When the grapes are ready to be pressed and fermented, the wine is left for 50 days to macerate on its skins. The wine then spends 24 months in barrique, tonneaux and barrels, after which it is bottled and rested for another 6 months in bottle. 15.5% ABV
TASTING NOTES: Garnet-Red in color, with aa complex Bouquet of Cherry Liqueur, Wild Berries, Black Currant, Blackberries, Spices, & Leather. On the palate this wine is full & dry, with a velvety mouthfeel. Flavors of Cherries, Blackberries, Fig, Prune, Chocolate, Licorice, Molasses, Coffee, Cinnamon, Nutmeg, Pepper, dried Mint, Leather, & Mushroom lead into a classic, persistent finish. Decant/uncork a few hours before drinking and serve at 18-20°C.
FOOD PAIRING: Pair this wine with flavorful dishes and with celebratory meals; this wine will pair particularly well with Red Meats like Beef, Lamb & Game, as well as with Game Fowl, Roasted Poultry, or strong aged Cheese like Roquefort. Decant or open 1.5 - 2 hours before serving.
