HISTORY: The winery is located on the Lazio side of the Abruzzo Lazio and Molise national park, more specifically in the village of Pescosolido (Frosinone). Danilo breeds awesome horses and this wine is dedicated to their independent and fierce character. Horses also provide natural compost.

The vineyards benefit from the area's high altitude, southern exposure, and loose soils, which create an excellent viticultural environment. Biodiversity plays a key role in the estate's philosophy, with the vineyards surrounded by centuries-old olive groves, holm oaks, and oak woods. The estate cultivates olive groves, junipers, and other crops, and even breeds horses to produce compost for organic fertilization. Danilo Scenna's wines are pure and expressive of the local terroir, respecting the environment's integrity and local farmers' traditions. The estate's wines are made exclusively from grapes grown on the property's vineyards.

ABOUT: Vines are trained using the Vite Maritata o Vite Alberata system (the vines are trained up in vertical by using oak trees or olive trees and this ancient tradition dates back to the Romans and the Etruscans). Tying the vines with the trees, allowed the farmers to maximize the soil which was used to plant other crops. Only few hectares in this area in Lazio and in Campania (more specifically in the Caserta province) are still trained in this way.

VINEYARD: Century old, un-grafted vines situated at 550 meters above sea level in Clay and Sandstone soils, marked by organic richness.

VINIFICATION: Grapes are manually harvested during the 3rd week in Sept. The must ferments in concrete vats with only indigenous yeast (no inoculated yeast is addd). The wine ages for few months in concrete vats, and is then bottled during the following spring. Macerated for 6 months on its skins. The wine does not undergo any clarification or filtration in the cellar, though it is racked twice (no pumps, just gravity). A tiny quantity of sulfites is added during the racking and before the bottling. Total sulfites at bottling: 27 m/l.

TASTING NOTES: Intense Amber and shining at sight. The nose is reminiscent of Chamomile, Ripe Peach and Quince. The mouthfeel is fresh, packed with flavors and Salty, with a slight bitter finish. The long maceration provides a nice Tannic structure, with intriguing richness in the palate & a long, lingering finish.

FOOD PAIRING: Legumes and lentils (great pairing with moderate spiced Indian cuisine) , truffle bruschetta, any kind of fat fish courses (salmon, grilled tuna bonito, etc) and white meats.
