ABOUT: The appellation is unique due to its hydrological makeup; it is marked by two rivers, the Sevre and the Maine, which have resulted in rich deposits of alluvial soil over thousands of years.The terroir also contains volcanic soil, which provides ample calcium, potassium, and magnesium to vines grown there, yielding abundant harvests. Christophe Olivier, of the fourth generation of Domaine de la Pinardière, manages the operation today.
VINIFICATION: Vinified in small vats. Low temperature fermentation to protect the freshness. 7.5 months on lies in underground cellars.
TASTING NOTES: This light bodied white wine is soft and forward, it offers complex mineral and floral notes with hints of apples and citrus aromas. Very lively with a crisp acidity that balances its roundness. It ends clean, on a refreshing acidity.
FOOD PAIRING: Enjoy with Shellfish, Oysters in particular, Seafood, with Snacks or as an Aperitif.
