HISTORY: TAVEL wines have existed since the Gallo-Roman era. In the first century of our era, vine was already considered as an important commercial activity for TAVEL. Vines have been cultivated by the monks since 887. Philippe le Bel, Louis XIV and the Popes enjoyed TAVEL wines since 1358. The TAVEL notoriety was built thanks to other well-known personalities such as Pope Clement V, Benoit XIII, and later Ronsard, Louis XIV and Balzac.
ABOUT: In 1937, still looking for progress, a few ambitious winemakers decided to create the Tavel winemakers cave. It was inaugurated by the French President Albert Lebrun in 1938. The Cave des Vignerons de Tavel is in the Rhone Valley near Avignon and Châteauneuf-du-Pape.Its geographical position in the heart of the Tavel vineyards is an indication of its deep local roots. VINIFICATION: Graepes are de-stemmed after Harvest. Vatting for 3 weeks, pumping-over several times during the alcoholic fermentation process. Temperatures are monitored to see if refrigeration is necessary at the start of fermentation and to raise them smoothly and gradually during fermentation. Raised and aged in Stainless Steel tanks.
TASTING NOTES: Bright & lively Garnet Red. Aromas of Red Fruit, Pepper & Spice. The attack is soft, structured and mellowed. Red Fruits, especially Cherries & Raspberries, Blueberries, Blackberries, Spice & Pepper follow on the palate. Long, persistent finish.
FOOD PAIRING: Grilled meat, Cured Meat, Cheese, Meat Pies, Pastas (esp. Lasagna or Cannelloni). Recommended to enjoy now, or Cellar 3-5 years.
