100% Pinot Noir from Côte de Nuits, Burgundy, France. Sustainable.
The pretty nose smells fabulously of dark cherry & purple Flowers. The palate has good, juicy flesh to it. The elegant balance & texture in the mouth that exhibits Cherry & Spice.
VINIFICATION: These vines are situated at the heart of the domaine, and are sustainably farmed. Vines are pruned in Guyot, with a density of 10,000 vines per hectare. Pruning, de-budding, and green harvests limit the yields. All grapes are harvested by hand. 100% de-stemming of the grapes. Grapes are then vinified traditionally in cuvée for anywhere between 10-15 days, depending on cuvée and vintage. Reds age in barrel (20-30% of which are new) for up to 18 months before bottling.
TASTING NOTES: The pretty nose smells fabulously of true Burgundian Pinot Noir, with notes of Dark Cherry, Raspberry, Purple Flowers, Forest Floor, Mushroom & Graphite. The palate has good, juicy flesh to it, with Dark Cherries, Blackberry, Blueberry & Cranberry notes. Hints of Earth, Cedar & Spice add depth & complexity. The tannin/acid ratio is also balanced impeccably well. Even in Burgundy you rarely find such an elegant balance & texture in the mouth that exhibits such pure Cherry & Spice.
