ABOUT: 30 to 35 year old vines (young vines fitting to the specific grapes’ expression), the estate is cultivated using Sustainable Agriculture Practices.

VINIFICATION: This wine was vinified at low temperature in order to preserve its fresh aromas, after which it sees 8 to 14 months aging on lees with regular stirrings, or “bâtonnages.”

TASTING NOTES: Light bodied, dry white wine. Brilliant White-Gold color. This wine has an expressive nose with floral, dominated by Apple, White Peach, Citrus, Orange, and enriched by delicate Toasted overtones. The bright palate is supple, w/ a fresh and crisp texture driven by notes of Apples & Lemon, w/ hints of Orange, Toasted Bread & Saline Minerality. The finish persists with a nice mineral through-line. Superb, harmonious and racy.

FOOD PAIRING: Aperitif, Fresh Oysters, Clams, Shellfish, Mussels in White Wine, Sardine Fillets, Grilled Eel, etc.
