ABOUT: Single Vineyard. Dry Farmed. Certified Organic and Biodynamic, no chemicals have been used on the farm since 1985. Farrm became the first certified organic/biodynamic farm (1990) on Long Island. The farm produces herbs, small fruits, and organic vegetables of 50-60 different varieties. The vineyard was planted in 2005, with four varieties of Bordeaux grapes; 8.5 acres of Cabernet Franc, Merlot, Malbec, Petite Verdot. The first wines were made from the 2012 harvest and then only two bottles were made; Farrm Reserve and Farrm Rosé. Their wines reflect the quintessential “terroir”, the taste of North Fork of Long Island, NY.
VINIFICATION: The grapes for this wine were harvested on 10/8/2020. 4 tons of CF and one ton of merlot. Brix=21.5, pH=3.89. We de-stemmed and crushed the grapes. I gave them an 8 hour cold soak. I reduced the pH with tartaric acid and innoculated with a Rhone yeast variety. It then fermented at 58 degrees Fahrenheit for 10 days. There was no ML and no oak exposure. 300 cases were bottled.
TASTING NOTES: Light Grapefruit and Strawberry aromas that would at times appear as White Cherries. On the palate this Rosé has White & Black Cherry, Raspberry & Strawberry fruit notes alongside a slight Earthy and Savory attribute, w/ a lovely juicy profile. Complex, with an Herbaceous edge to it, this wine is delicious by itself, but it will hold up nicely with a wide range of foods and culinary styles.
FOOD PAIRING: (From the Winemaker) Pair this wine with Chicken on the grill. No real fragrant additions to the Chicken needed, just a little Lemon Juice, Salt and Pepper marinade; this wine will also pair exceptionally well with anything off the Grill, or with Fried Pork, Fried Fish or Pork/Chicken cutlets.
