ABOUT: This wine comes from some of the oldest I Stefanini vineyards, ranging up to 70 years old, located in the hills around Monte Tenda Castalunga village
VINIFICATION: Vines are aged 30-70 years on average. Soils are predominantly Volcanic Red, rich in iron oxides. Grapes are trained to a Pergoletta Veronese system. Harvested at the end of September. Soft pressing of de-stemmed grapes, fermentation at controlled temperature totally in steel, long aging on the yeasts until bottling. Bottled between March-May.
TASTING NOTES: Bright Straw Yellow color with Greenish reflections. On the nose it is intense, revealing its Mineral personality deriving from the volcanic Soave Classico soil, together with fruity notes of Peach, Apricot, Yellow Plum and Medlar (a local flowering fruit comparable to Toffee Apple or Overripe Date notes). The mouth is firm, full, rich, and perfectly balanced between freshness and smoothness. Long lasting finish, with the typical Garganega almond aftertaste.
FOOD PAIRING: This wine is best served with first courses, like Pasta, Soup or Risotto. Excellent with Shellfish and Medium and Aged cheeses, like Grana Padano and Taleggio.
