i Stefanini Prosecco DOC is made of 100% Glera, from the Treviso region of Veneto, Italy.
The soil in this region of Treviso is not very deep, well drained and not too fertilized so as not to unduly favor the natural vigor of the vine, and provide enough stress to produce the delicious fruit used to make this wine.
VINIFICATION: Grapes are harvested late, and crushed at a soft pressure, to ensure that the skins are not broken. Fermentation is then carried out at low temperatures (16 - 18 °C), very slowly and with selected yeasts. The Charmat Method is used to get a delicate sparkling body. This wine is then raised in 100% stainless steel tanks, before being bottled. 7,000 bottles produced annually.
TASTING NOTES: This wine has an intense bouquet of floral notes coinciding with Apple, Pear & Citrus, which follow through onto the balanced, dry and crisp palate. Apples & Citrus are predominant in the mouth, w/ a fine, persistent perlage. This wine has a clean, medium-length finish.
FOOD PAIRING: This wine is excellent as an Aperitif, and is the ideal Prosecco to use in an Aperol Spritz; this wine will also pair beautifully with Shellfish, White Fish, Charcuterie, Cheeses, & after-dinner Biscuits.
