HISTORY: Jean-Louis Denois is widely considered a rising star of the Languedoc. Growing up the sixth generation of a Champagne-making family, he ultimately found himself wanting to make his own way in wine. He painstakingly researched vineyards the world over, and found what he was looking for on the Languedoc’s southwestern fringes. There, in the upper Aude Valley at the foothills of the Pyrenees, the cool influence of the Atlantic gives his vineyards a terroir that captures the essence of Champagne without any of the attitude or fuss.

In 1991, Jean-Louis planted his first grapes for sparkling wine, and he’s never looked back. Interestingly, while J.L Denois’ vineyards are all in the Limoux Appellation, his refusal to use the Mauzac grape means he does not use the designation.

ABOUT: From vineyards in the Fenouillèdes, upper Agly Valley, Roquetaillade and Magrie in the upper Valley of the Aude. 30 Year old Vines.

VINIFICATION: Organically grown. Hand-picked and transported in small cases. Pressing of whole-grapes and selection of juices. Second fermentation in bottles and ageing with lees for 3 years on racks (traditional method). Tilted and shaken before disgorging and final corking. Received a small dose of around 7 g of sugar per liter.

TASTING NOTES: Golden bright color with Ruby hints and a fine, consistent mousse. Fresh on the nose with notes of Rose, Elderberry, Apple, Pear, Quince, Dried Apricot, and light, Smoky-Sweet Spices. Flavors of Brioche and Rainier Cherry, with a persistent element of minerality on the palate. The mouth is generous and well structured, striking a balance of roundness, fruitiness, and freshness, persisting to a long finish marked by Lemon, Exotic Fruit, Red Currant and a final note of Salinity

FOOD PAIRING: This wine will serve wonderfully as an Aperitif, and will pair beautifully with Pastas, Lemon Chicken, Deli Meats, Cured Meats, Charcuterie, Fish (especially grilled Sole), Shellfish, Seafood, Sushi and Salads. This wine also pair exceptionally well with Comté (hard cheese), or Carpaccio of Pineapple with Cinnamon.
