ABOUT: Grapes are sourced from 35 year old vines from privately owned plots of land of the estate, on the plateau of the Mantineia PDO (Protected Denomination of Origin) at an altitude of 750-800m in the Pelopponesian region of Greece. Soil type: Limestone. Area yields: 700 kg / acre.
VINIFICATION: Vinification begins with the pre-fermentation cold extraction method in a controlled environment. This is followed by primary alcoholic fermentation, which slowly takes place in Stainless Steel tanks at controlled temperatures. The wine remains for 2 months in the fine wine lees with periodic stirring, and is raised in Stainless Steel tanks until it is ready to be bottled.
TASTING NOTES: A beautiful summertime Greek white wine. Aromas are wild & exotic w/ floral intensity & a tangy crispness, offering a unique character and profile in a refreshing & food-friendly white wine. Fresh and pleasant in the mouth, with notes of Lemon, Stone Fruit, Honey & Minerals. Moderate length aftertaste/finish.
FOOD PAIRING: Serve this wine at 50-54º (10-12º C) with Seafood, Shellfish, Salads, Veal or Pork dishes, Artichokes, & soft or hard Yellow Cheeses.
