VINIFICATION: Hand-harvested. Whole cluster fermented for 30 days via Spontaneous Fermentation w/ Indigenous Yeasts in Neutral Oak barrels. Aged for 24 months in Neutral Oak, 12 months in bottle. Unfined, Unfiltered, No Added Sulfites.
TASTING NOTES: Aromas of Spiced Cherry Cola mixology type stuff with Cinnamon Hot Tamales and Wild Berries. The palate has soft tannins w/ notes of Strawberry, Cream, Toasted Macadamia Nuts, Roasted Veggies.
ery soft creamy oak notes over strawberry pop tart, toasted macadamia nuts, and roasted veggies on a velvety and approachable nose. Sautéed broccolini and avant-garde nut butter lead a medium bodied and savory palate that starts and ends dry and stays salty and interesting throughout. Love the dry quality with subtle supporting tannins, low acidity, a little smoke, like burnt butter late on the palate. Really cool and vegetal and interesting.
