ABOUT: Liten Buffel is a project by Zack Klug and Patrick Vaughn, making natural wines in US side of Niagara in New York state. They focus on low intervention wines that reflect a sense of place and time, and are minimalists in the cellar, and in the vineyard (tended with biodynamic practices).
VINIFICATION: All the practices we love: Spontaneous Fermentation, Whole Cluster, 30% Carbonic Maceration, Unfined, Unfiltered, with No Sulfites Added. Just foot crushed grapes, settled in old wood for 16 months, w/ Batonnage for 3 months, and bottled by hand at the proper time. Pressed at cap fall - 4 months on skins
TASTING NOTES: This Pinot Noir needs a few minutes to breath and then opens into this high-toned sensation of a Pinot, doing what it does best, giving stage to the terroir – the sense of place. Crunchy red cassis, wildflowers, forest floor, cedar, zingy acidity.
