AREA OF ORIGIN: The vineyards of our co-op members cover the most suitable areas of the Nervia and Verbone valleys, characterized by mainly Clayey-Sandy soils rich in fossils, with some Limestone and a pH between sub-alkaline and acid.

CULTIVATION SYSTEMS: The Rossese vines are raised with the traditional Alberello system, with one spur per branch. All cultivation operations are carried out by hand due to the conditions imposed by the morphology of the territory. Post veraison thinning of about 25-30% .

VINIFICATION: Hand-picked grapes are delivered by the co-op members in the hours immediately following the harvest and are softly pressed upon their arrival in the cellar, where they are scrupulously selected. Fermentation takes place at a controlled temperature (30°C) in stainless steel tanks and conducted by selected yeasts. During the maceration (6-8 days), which is longer than in the classic version, the must-wine is followed by chemical and organoleptic analyzes and operations (pumping over and delestage) are performed on the fermenting mass to optimize color extraction and body. Aging and malolactic fermentation in second passage barriques especially chosen by our oenologist from prestigious companies. The wine is bottled only when it is deemed ready. 

TASTING NOTES: Ruby Red color which turns towards Garnet hues during aging. With a soft, savory, slightly warm and velvety flavor with a pleasant, typical bitter aftertaste. The aromas recall wild Strawberries, Cranberries, Roses and dried Violets, with aging bringing out notes of Licorice and Aromatic Herbs, and hints of candied Red Cherries. 

FOIOD PAIRING: At the table this wine goes well with Aged Cheeses, Game, Game Fowl, Roasted Turkey, Fatty Fish, Pizza Margherita.
