Vines are planted on a diverse array of vineyard sites, and different terroir to give broad brush strokes of the appellation. The Grenache vines are 70 years old, the Mourvedre vines are 35 years old, the Cinsault comes from 25 year old vines, and the Syrah comes from 15 year old vines. The Syrah is trellised, while the Grenache, Cinsault and Mourvedre are grown in the Gobelet style. Soils are plowed by horse, and vines are grown using Sustainable viticulture.
VINIFICATION: Each varietal is vinified separately after being hand-picked (and tasted) for optimal ripeness and maturity. Grapes are macerated for an extended period of 2-4 weeks, during which time it is gently punched down, and pumped over. Aged in concrete tanks and large wooden vats.
TASTING NOTES: Dense Ruby-Purple color. Floral-accented aromas of Red and Dark berries, Allspice, and Anise. Abundant Cherry, Cassis, & Strawberry aromas as well as flavors, and a well delineated, focused & full bodied style.
