100% Granazza, a rare and ancient white grape variety found around the town of Mamoiada in the center of Sardinia.
 
VINIFICATION: Organic & Biodynamic farming. Spontaneous fermentation w/ Native Yeast, after which the wine undergoes 5 days of skin contact, after which it is bottled.
 
TASTING NOTES: Structured and elegant, with aromas of mandarin, orange blossom, a little salt and smoke. Smooth, persistent and fresh, with apricot, and peach, and hints of salt, white pepper, and almond.
 
FOOD PAIRING: Pair this wine with Appetizers, Light Snacks, or Seafood, Rich Fish, Lean Fish, Shellfish, or Vegetarian dishes.
