HISTORY: Paitin was already one of only a handful of top Barbaresco producers in the region, crafting stunning age-worthy Nebbiolos before the brothers, Giovanni and Silvano began a revolution of the property. They built a new winery and cellar, returned to making Nebbiolo the traditional way, but their biggest move was bringing in Dante Scaglione in 2010 – fresh off a 16-year stint at the helm of Bruno Giacosa. Lucky for us, he didn’t bring along the three hundred dollar price tags, just his insane standards for quality. Serraboella di Neive e Ca Veja di Alba
Perhaps his most important project was crafting the wines off of one of the most revered vineyards in Barbaresco – the famed Serraboella Cru – of which the Paitins own 10 hectares. From those very special 10 hectares – the top Nebbiolo parcels were selected each year for their infamous Sori Paitin Barbersco. And prior to Dante’s arrival, the remaining parcels were blended with wine from the famed Ca Veja vineyard in Alba. However, that all changed in 2013 when they finally realized what they were just blending away.
ABOUT: While the parcels selected for Sori Paitin produce Nebbiolo that most consider more like a fine, brooding Barolo, the much lighter Starda from the remaining parcels is a stunning example of the diversity of Nebbiolo but meant to be enjoyed within a half dozen or so years of release. The vineyard for this wine is the Serraboella di Neive e Ca Veja di Alba – a Grand Cru vineyard site in Barbaresco. Vines are Guyot trained, and were planted in 1980.
VINIFICATION: Viticulture is Certified Organic with the sole use of sulphur and natural copper compound; manual or mechanic mowing is utilized to avoid the use of herbicides. Harvest is exclusively manual. The Nebbiolo is all vinified with the same philosophy: grapes are subject to pressing and de-stemming, after which they undergo primary fermentation, and then macerate from 3 to 6 weeks in Stainless Steel tanks. At the end of the winter, the wine is brought to wood barrels where it stays for the duration of 6 months to 1 year. The size of the barrels used varies between 25 to 50 hectoliters, and all barrels are made of Slavonian wood, with an age of 15 years.
TASTING NOTES: Dried Cherry and Wild Strawberry on the nose, with a pleasant Mushroomy edge to the fruit. Medium-bodied with a tight bead of Nebbiolo fruit riding the fine, firm tannins. Notes of Sweet Tobacco, Cedar, Blood Orange, Mint and Dried Red Cherry are all beautifully lifted on the palate. Finishes tight and firm. Enjoyable to drink now, but this wine will benefit from decanting, and will be in its optimal drinking window starting in 2023.
FOOD PAIRING: This wine will pair beautifully with Game, Lamb, well-marbled cuts of Beef, Game Fowl, Duck, Poultry, Mushroom-based dishes, Risotto, and rich Pasta dishes w/ Red Sauce.

The 2020 spent nine months in cask. It should be stellar with a few more months in bottle. It is already pretty delicious.”
