100% Tinto Fino (Tempranillo) from the Ribera del Duero D.O., Spain. Certified Organic, Unfiltered.
VINIFICATION: Hand harvested. Cold skin maceration for 7 days. Alcoholic fermentation in stainless steel tanks for 12 days at 24ºC. A total maceration period of 18 days. Aged for 8 months in 2nd and 3rd year french oak barrels of 400l.
TASTING NOTES: Deep Crimson Red, w/ Purple reflections. It has intense aromas of Cherry and Black fruits, especially Blackberries, Prunes & Plums, w/ hints of Leather. On the palate the wine is elegant with good acidity, and a great balance, w/ predominantly Black Fruit notes, Leather, & Tobacco. The fruity character is combined with a very gentle touch of oak, and a fresh and clean finish.
FOOD PAIRING: Pair this wine with Steaks, Burgers, Game, Lamb, Roast or Grilled Poultry, BBQ, and Grilled Vegetables.
