Espigol, meaning "lavender" in Catalan, is a single varietal wine that evokes the aromas of the Mediterranean. An intense and aromatic wine. With it we return to the authenticity of the territory and ancestral varieties, Malvasia de Sitges, which delights us with the purity of its primary aromas. Typical of this variety originating from the Garraf, a region bathed by the sea. Now, in our Les Torres estate, in Alts d’Ancosa, we find a Malvasia de Sitges that delights us with its great aromatic charge, intensity and freshness.
VINIFICATION: We harvest the grapes by hand and after receiving the grapes at the winery and gentle pressing, the grapes are fermented at 16ºC in stainless steel tanks for 17 days using only native yeast. The wine is then left on its fine lees in a combination of Stainless Steel tanks and glass demijohns, then bottled with almost no sulfur added. Unfined and unfiltered; suitable for Vegans. Organic wine made from biodynamically grown grapes and with minimal intervention in the winery.
TASTING NOTES: Opaque pale yellow color with greenish tones. Intense bouquet with notes of sweet White Fruit and Forest Flowers. The palate has a fresh and very aromatic entry, with good acidity that makes it very pleasant and gives the wine great length. Minerally and bright on the palate, with Tropical notes, Pineapple, White Fruit, Saline and a lovely, complex long finish.
FOOD PAIRING: Tropical Fruit and Citrus Salads, Shellfish, Seafood, Fish, Sushi, or Poultry. Recommended serving temperature between 10ºC and 12°C.
