HISTORY: The history of Parés Baltà begins in the eighteenth century, when in 1790, the first vineyards were planted on the Parés Balta estate, vineyards that still surround the manor house where our winery is located. Currently it is the third generation of the Cusiné family, Joan and Josep, who are at the head of the winery, with the unconditional help of their parents and their wives, María Elena and Marta, two women that fell in love with the brothers while learning about the world of wine and later becoming the winemakers of the winery.
 
ABOUT: While this is Sumoll, it’s from the ‘gra gros’ clone, or larger-berried variant. By recovering little-cultivated ancient varieties, we want to pay homage to that ancestral agriculture, which was practiced in the past, and which at Parés Baltà we have never forgotten.The large berried Sumoll has surprised us on how it exhibits its intense aromas with bright colors and mallow nuances. It has a very fruity pulp with thick and tinted skins, it shows all its splendor in a fresh and attractive wine.
 
VINIFICATION: Organic wine made from biodynamically grown grapes and with minimal intervention in the winery. Traditional elevage in a Stainless-Steel tank, with maceration on the grapes' very soft skins at 23 °C temperature to highlight the maximum expression of the fruit that the skins of Sumoll contribute.
With more surface-contact of the skin, the more fruity aromas and the characteristic mallow purple color we obtain. This wine is only gravity filtered, and therefore is a wine suitable for vegans. Low sulfites.
 
TASTING NOTES: Red currant color, light and bright. Intense and delicious aromas of Forest Berries, with Red Currant, Red Cherry, Cranberry, Raspberry, Rooibos & Thyme. The palate is bright, fresh and juicy with Red Currant, Raspberry, Cranberry & Cherry notes joining with Blackberry, Peppercorn & Thyme to offer a delicious glou glou drinking experience, w/ Talc Mineral notes leading to the med. length finish.
 
FOOD PAIRING: This wine will serve perfectly as an Aperitif, but will also pair very well with Appetizers, Snacks, Tapas, Pizza, Cheese, Pastas, Fried Foods, Salads & Vegetables.
