ABOUT: This classic cuvée marries finesse, freshness, and delight. Cuvée du Fondateur Brut has delicate but persistent bubbles that release an explosion on the palate.

VINIFICATION: Aged first in stainless steel pressure vessel tanks then a minimum 15 months tirage. 18 to 24 months on average

TASTING NOTES: This cuvée opens with rich aromas of Pear, Citrus, Rose, and Dried Fruit. Notes of Toasty Brioche, Citrus Zest, and Green Apple mingle nicely on the palate. There is a vibrant mousse with fine bubbles, and plenty of acidity. This works as a classic Champagne for celebrations, or even as a versatile food pairing due to its acid. A predominance of Pinot noir is apparent in the bright, berry fruit aromas and a rich, mouth-filling texture. The Chardonnay lends liveliness and provides a pleasantly long, clean finish.

FOOD PAIRING: Characteristically known for its fresh, perfumed, and effervescent palate, the Brut is a refreshing choice for an Aperitif, and will pair exceptionally well with Shellfish, Sushi, Fish, Appetizers, Charcuterie, Pork, Cheeses & Fried Foods.
