VINIFICATION: “Sparkling wine experience made from certified organic California grapes. Raw, vibrant and ready to take on anything.” The grapes are de-stemmed and spontaneously fermented in stainless steel tanks for 45 days. The second fermentation takes place in bottles (with a blend of natural ferment + organic sugar as the tirage liqueur). Undisgorged.
TASTING NOTES: Tropical and refreshing! Gooseberry, Lychee, Bartlett pears, 9.9% ABV only. This is a perfect sparkler to enjoy on its own whenever you feel like it, or with Mild Cheeses, Roasted Chicken or Smoked Fish.
