100% Sauvignon Blanc from the North Fork of Long Island, New York State. Woman winemaker, Sustainably farmed.

Alie Shaper started her professional career as a chemist, but she soon made the transition into wine after she fell in love with the intricacies of the winemaking process, as well as the sense of place she found in the North Fork AVA of Long Island, NY.

VINIFICATION: The grapes were left on the vine until early October to allow the fruit to reach optimal ripeness, with flavors of riper melon & tropical flavors. Slow fermented in stainless steel at cool temperatures to maintain the naturally high acidity, a slow fermentation results in a broader mid-palate, with a fresh, clean finish.

TASTING NOTES: This Tropical, unoaked Sauvignon Blanc is a wine that just won't settle down. Lean and sophisticated. The initial nose of Honeydew Melon and summer rain evolves in the glass, turning to the warm scent of Lemon cookies and Apple Blossom, with hints of Jasmine. On the palate, this wine has notes of fresh Papaya, Lemongrass, and Pink Pineapple. There is also a broad stroke of Meyer lemons and a textural coating of the tongue, reminiscent of beeswax. Crisp, mineral & saline-driven with a fresh, clean finish.

FOOD PAIRING: The natural acidity of this Sauvignon Blanc combined with a fat tropical mid palate lends this lean beauty to pair with deep water Peconic Bay oysters. This local culinary pairing is becoming a staple at summer raw bars. All you need are the oysters, a dollop of melted butter & a few drops of lemon juice for the perfect match for this wine. This wine also pairs beautifully with Shellfish like Scallops, Clams & Mussels, as well as Fish, Goat Cheese, & Spring/Summer Salads.
