VINIFICATION: Grapes were harvested at night, after which they were pressed as soon as they arrived to the cellar. Slight press and static debourbage (clarification). Fermentation at 12-14ºC. Cold stabilization and smooth fining
TASTING NOTES: This wine has a brilliant greenish color, with bright flecks of Yellow. On the nose there are Tropical aromas of Papaya and Pineapple, Peach and Citrus playing a supporting role in the background. On the palate, this wine is light, fresh and bright, with notes of Papaya Pineapple and Mandarin Orange notes. Fruit forward, with a medium-long finish driven by Mandarin Orange notes and Mineral inflections.
FOOD PAIRING: This wine will pair beautifully with White Fish, especially Hake, Cod, and Grilled Sole, as well as with Smoked Fish or Meats, Roast Poultry, White Meats, and Spicy Fare. This wine will also pair exceptionally well with Olive Oil on freshly baked Bread.
