Apple-Pear Cider from the North Fork + Hudson Valley. Organic, Biodynamic, Natural, Unfined, Unfiltered, Suitable for Vegans.
HISTORY: Todd and Crystal left Brooklyn in the Summer of 2016 after a combined 30 years in the city to try their hand at building sustainable food systems in the Hudson Valley.
ABOUT: Both had very limited experience in agriculture, mostly relegated to growing tomatoes, peppers, herbs, and hops on fire escapes (when the neighborhood squirrels didn't kill everything out of spite.) Being lifetime New Yorkers, they wanted to show that interesting and dynamic wines could be grown in the Hudson Valley in the context of a small, Biodynamic, permaculture-focused farm.
FRUIT: Northern Spy Apples from an IPM-Farmed (Integrated Pest Management) orchard in Ontario County, North Fork + Callery Pears from Todd’s own farm in the Hudson Valley.
PRODUCTION: A couple of buckets of Callery Pears were macerated in the Northern-Spy Apple cider, fermented naturally with Wild Yeast, then racked into neutral French oak 500L puncheons and left undisturbed for 6 months before canning unfiltered, and with a natural sparkle. Unfined.
TASTING NOTES: Crisp, dry and pleasantly summery .Bright and Fruity cider flavors mingled with a deeper spicy oomph of the Pears. Perfect for a day on the beach, or huddled up by a fire... & everything in between.
